Food Emissions: What You Eat Matters More Than Where It’s From

Food production is one of the most significant contributors to global greenhouse gas emissions, responsible for around 25% of the world’s total. Lamb and mutton also have a considerable carbon footprint, emitting 40 kg of CO2e per kilogram.

In contrast, plant-based alternatives like tofu, soy milk, and beans generally have a lower environmental impact, with tofu emitting only 3.2 kg of CO2e per kilogram.

If the world is to meet its target of limiting global warming to “well below” 2C, some degree of diet shift will be necessary, scientists say. If it is to strive for the most optimistic target of keeping warming to 1.5C, changes to diet may be even more crucial.

The Real Impact: What You Eat Matters More

Though it might seem logical that eating locally reduces emissions by cutting down on transportation, research shows that the emissions from food transport are surprisingly low. For most foods, transport accounts for less than 10% of their carbon footprint. The bulk of emissions come from land use and farming practices. For high-emission foods like beef, transportation contributes less than 1% to its overall emissions.

The takeaway: Focusing on what you eat is a much more effective way to reduce your carbon footprint than worrying about how far your food has traveled. By understanding the environmental cost of food production, individuals and corporations can make informed choices that lead to meaningful reductions in emissions.

Why Beef and Animal Agriculture Are Major Polluters

Often, this land is cleared from forests, especially in regions like the Amazon rainforest, contributing to deforestation. A single cow can produce between 70 to 120 kilograms of methane each year, making cattle farming a significant source of methane emissions globally. Since methane has a more immediate effect on global warming, these emissions are particularly problematic in the short term.

Compared to plant-based foods, raising cattle is highly resource-intensive. Producing beef requires massive amounts of water, with estimates ranging from 10,000 to 20,000 liters of water needed per kilogram of beef. This includes water for growing feed, drinking water for the animals, and water used in processing. Additionally, the amount of energy needed for animal-based agriculture, from feed production to transportation, is much higher than for plant-based foods, leading to greater fossil fuel consumption.

The Power of Switching to Chicken and Plant-Based Meals

Switching from beef to chicken can significantly reduce your carbon footprint, as chicken produces about 10 times fewer emissions than beef. Beef has one of the highest environmental impacts due to several factors as mentioned above. In contrast, poultry farming is far less resource-intensive.

Here’s why chicken is a more sustainable option:

  1. Lower Land Use: Raising chickens requires less land compared to cattle, helping to reduce deforestation and habitat destruction.

While both have a relatively high impact, the overall contribution to emissions is less significant when considering the smaller portions consumed compared to other foods.

In short, while coffee and chocolate do have higher footprints than most plant-based foods, their overall impact is moderated by their serving size and limited nutritional role.

The Impact of Just One Day

Switching from beef or lamb to poultry, or even better, plant-based meals for just one day each week can result in significant carbon savings:

  • Replacing Beef with Chicken: Simply swapping beef with chicken one day a week can reduce your food-related emissions more than eating entirely local. The difference in carbon output between the two is so vast that a small shift in diet has a more substantial environmental benefit than reducing food transport.
  • Cutting Red Meat and Dairy: By going red meat and dairy-free for just one day each week, you can save the equivalent amount of emissions as you would by eliminating all food transport entirely. Beware of Air-Freighted Foods

While food transportation doesn’t typically make a big impact on carbon emissions, there’s one exception: air-freighted foods. These are usually perishable goods that need to be consumed quickly after harvest, such as asparagus, green beans, and certain berries. Air travel emits 50 times more CO2 per kilometer than sea transport, making air-freighted foods a significant contributor to emissions.
